Today I thought I would feature something different as a special weekend treat … and by treat I really mean it! Aimee from Twigg Studios is here sharing her recipe for Triple Lemon Cupcakes! A sweet and pretty dessert these cupcakes would be perfect served at a bridal luncheon or engagement party. So read on to learn how to make these lemony delights! Hi I’m Aimee from Twigg studios and I’m so happy to be here sharing this guest post.These cakes are a lemon lovers dream, they have lemon sponge, with lemon curd filling and lemon icing. They were a big hit with my family and I think they were the best I have made yet.
To make the cupcakes:
2 tsp baking powder
Juice and zest of one lemon
Preheat the oven to 180c
In a bowl cream together the butter and sugar until thick and creamy about 2/4 minutes with an electric whisk, then add the eggs one at a time and blend. Add half the juice and zest and keep the rest back for the frosting. Sift in the flour and baking powder and whisk. Spoon into cupcake wrappers and bake for about 15-20 minutes until risen and cooked through. Let cool
To make butter cream:
50g cream cheese
50g butter (trex)
300g icing sugar
juice and zest from lemon Whisk together the butter, cream cheese and lemon zest/juice with the icing sugar until thick and creamy. Put into a piping bag. Take the cupcakes and using a spoon or a apple corer remove the centre, spoon in some lemon curd, then put the centre back on top and pipe on the icing.
