  1. Preheat the oven to 400 degrees. Line a baking sheet with parchment paper.
  2. Cut your puff pastry into 6 rectangles. Prick the center of the puff pastry squares with a fork. (You want to leave the borders bare.)
  3. Combine the chicken with the pesto in a bowl.
  4. Top the center of the puff pastry squares with chicken, spinach, and tomatoes.
  5. Brush the edges of the puff pastry with beaten egg.
  6. Bake the tarts for 20-22 minutes until the pastry is risen and deep golden. Serve with a side salad or roasted veggies.
