No matter what type of a cook you consider yourself it’s good to have a few great recipes under your belt. So today I’m starting a new series of “Date Night Dinners.” Whether your cooking for a new beau or your in laws, you want the recipe to be fool-proof. While I love cooking, I’m no Julia Childs so I promise that all of the recipes in this series will be easy and quick to make.To kick things off I am sharing one of my go-to weeknight dinners, individual chicken pesto tarts. Topped with chicken, pesto, tomatoes, and spinach these tarts taste delicious and look impressive – obviously the most important factor when you are cooking someone else dinner! These tarts take only a few minutes to put together and about 20 minutes to bake so they are perfect for a weeknight date at home. Read on below to get our recipe for individual chicken pesto tarts.
The best part about this recipe is you basically pile on already cooked ingredients meaning there’s not a ton of prep work.
Preheat your oven to 400 degrees and line a baking sheet with parchment paper. Cut your puff pastry into 6 rectangles and prick the center of the puff pastry squares with a fork. (You want to leave the borders bare.) Combine the chicken with the pesto in a bowl. Top the center of the puff pastry squares with chicken, spinach, and tomatoes.
Brush the edges of the puff pastry with beaten egg. Bake the tarts for 20-22 minutes until the pastry is risen and deep golden.
